Directions:
- Preheat oven to 450°F. Spray rimmed baking sheet with non-stick cooking spray.
- In small bowl, combine sour cream, lime zest and cilantro.
- Season salmon filets with ½ teaspoon salt and ½ teaspoon of pepper. Over each filet, spread sour cream mixture. Arrange salmon on prepared baking sheet.
- In small bowl, toss together onion, peppers, oil, remaining salt and remaining pepper. Arrange on baking sheet around salmon. Bake 12-15 minutes, until salmon flakes easily with a fork. Break salmon into chunks.

Directions:
- Preheat oven to 375°F. Fill casserole dish with about ½” water.
- In large skillet over medium heat, brown beef until cooked through. Stir in seasoning mix, tomato paste and water. Bring to simmer; cook 10 minutes.
- Divide mixture into bell peppers. Arrange in casserole dish. Sprinkle with equal amounts of cheese.
- Bake 15 to 20 minutes, until bell peppers are softened.
- Sprinkle with green onions and serve. Refrigerate leftovers.
