  • 1 medium red onion, sliced
  • 1 red bell pepper, cut into strips

  • 1 yellow bell pepper, cut into strips
  • 2 tsp. canola oil
  • 8 fajita flour tortillas, warm

  • 1 red bell pepper, cut into strips

Directions:

  1. Preheat oven to 450°F. Spray rimmed baking sheet with non-stick cooking spray.
  2. In small bowl, combine sour cream, lime zest and cilantro.
  3. Season salmon filets with ½ teaspoon salt and ½ teaspoon of pepper. Over each filet, spread sour cream mixture. Arrange salmon on prepared baking sheet.
  4. In small bowl, toss together onion, peppers, oil, remaining salt and remaining pepper. Arrange on baking sheet around salmon. Bake 12-15 minutes, until salmon flakes easily with a fork. Break salmon into chunks.
  5. To serve, arrange salmon, peppers and onions in tortillas.

  1. Preheat oven to 375°F. Fill casserole dish with about ½” water.
  2. In large skillet over medium heat, brown beef until cooked through. Stir in seasoning mix, tomato paste and water. Bring to simmer; cook 10 minutes.
  3. Divide mixture into bell peppers. Arrange in casserole dish. Sprinkle with equal amounts of cheese.
  4. Bake 15 to 20 minutes, until bell peppers are softened.
  5. Sprinkle with green onions and serve. Refrigerate leftovers.
