5 Baking Blunders and How to Fix Them

The Way Out: The butter was likely too warm when you made the dough. Chill cookie dough for at least 30 minutes before baking, and make sure the oven is fully preheated.

The Way Out: Your cake probably needed more time in the oven, or you opened the door too soon. Test with a toothpick before removing, and resist peeking during the first half of baking time.

The Way Out: To prevent cookies from drying out in storage, slightly underbake them initially, then keep them in an airtight container with a slice of bread.

The Way Out: You might be mixing too much after adding the flour. Stir just until ingredients come together — a few lumps in muffin batter are actually good!

The Way Out: Your oven probably has hot spots, or your baking sheet is too crowded. Rotate pans halfway through baking and leave about 2 inches between items.
