Green onions are a garnishing go-to. They’re milder than red or white onions, and they liven up all sorts of dishes — from cream cheese-slathered bagels to baked potatoes. Here are just some of the reasons why we love this humble-yet-mighty allium.
- They include vitamins, minerals and antioxidants. Green onions include vitamins A, C and K, as well as folate and phytonutrients.
- They can last a long time in the fridge. If you refrigerate green onions in a jar of water (bulb end submerged), they could last 2–3 weeks.
- They’re low in calories but big in flavor. A cup of chopped green onions is only 32 calories.
- They are easy to grow...and regrow! Submerge the root portion of the green onions in a jar of water. Set in full sunlight, changing the water every few days, then transfer to soil after about a week.
- Roll out the red carpet because they’re culinary superstars. You can always count on green onions to add a burst of zippiness and color to recipes. They’re extremely versatile and work in hot and cold dishes.
