What to Eat for Breakfast
Make these little breakfast sandwiches the night before and refrigerate overnight for a delicious, stress-free morning meal.
Prep Time: 5 min. Cook Time: 30 min. Total Time: 35 min. Difficulty: Easy Serves: 12
- 16 oz. Mild Pork Sausage Roll, formed into 12 patties
- 3 Tbsp. butter, divided
- 8 large eggs, beaten
- 1 package (16 oz.) Hawaiian Dinner Rolls, split horizontally
- 12 slices Yellow American Cheese
- 1 Tbsp. maple syrup
- Heat oven to 350°F.
- Cook sausage patties in a skillet over medium heat. Cook for 10-12 minutes, flipping once, or until internal temperature reaches 165°F. Drain on a paper towel-lined plate.
- Wipe the pan clean. Melt 1 tablespoon butter in a skillet over medium-low heat; add eggs. Cook, gently scraping the bottom of the pain, until eggs are soft set.
- Place bottom half of rolls on a lightly sprayed rimmed baking pan. Layer 6 slices of cheese, cooked sausage patties, eggs and remaining cheese. Cover with top of rolls.
- In a small microwave-safe bowl, melt the remaining 2 tablespoons butter. Mix in maple syrup. Brush butter mixture over top of rolls.
- Bake 8-10 minutes until cheese is melted and buns are crisp. Cut into individual sandwiches before serving.
- Refrigerate leftovers.
Tip: If making ahead, cover pan with foil after brushing the sandwiches with butter and refrigerate. Pull the pan out of the refrigerator while pre-heating the oven. Bake covered for 15 minutes. Uncover and bake for an additional 5-8 minutes to crisp the buns.
Breakfast casseroles are a great option for a small group brunch or as a make ahead option for quick breakfasts all week long.

- 8 eggs
- 1½ cups half and half
- 2 Tbsp. dill, finely chopped, plus more for serving
- ½ tsp. salt
- 4 oz. Private Selection™ Smoked Coho Salmon, flaked
- 4 oz. cream cheese, cut into pieces
- 3 everything bagels, cut into 1" pieces
- ¼ cup red onion, finely chopped
- 2 Roma tomatoes, seeds removed and finely chopped
- Preheat oven to 350°F. Butter 2 qt. baking dish; set aside.
- In large bowl, whisk together eggs, half and half, dill and salt until well combined. Add salmon, cream cheese pieces and bagels. Stir gently to combine.
- Transfer mixture to prepared baking dish.
- Bake 40-45 minutes or until puffed and golden brown around the edges.
- Serve topped with chopped onion, tomato and additional dill. Refrigerate leftovers.
