In the Pacific Islands, Caribbean, Southeast Asia, Africa, India and China, taro is a food staple similar to sweet potatoes. In Hawaii, taro is used to make poi, a traditional dish made by pounding taro with bananas and coconut milk. This potato-like root can range between 5 inches to over a foot long. The flesh is often creamy white or pale pink and sometimes becomes purple-tinged when cooked.
