Air Fryer Patatas Bravas
Patatas bravas is a popular Spanish tapa dish made with fried potatoes and bravas sauce (a smoky, often spicy tomato sauce). Here, the crispy texture comes from the air fryer rather than frying the potatoes in oil.

Ingredients
- 1⁄4 cup mayonnaise
- 1 clove garlic, finely minced
- 2 tsp. lemon juice
- 1 1⁄2 tsp. salt, divided
- 4 Baker Russet Potatoes, peeled and cut into 1” cubes
- 3 tbsp. olive oil, divided
- 1 shallot, chopped
- 1 tsp. smoked paprika
- 1⁄4 tsp. red pepper flakes
- 2 large tomatoes, chopped
- 1⁄4 cup water
- 1 tbsp. sherry or red wine vinegar
Directions
- In a small bowl combine mayonnaise, garlic, lemon juice and ¼ teaspoon salt. Refrigerate until ready to serve.
- Heat air fryer to 400°F.
- Toss potatoes with 2 tablespoons olive oil and 1 teaspoon of salt. Place in a single layer in air fryer basket. Cook 15-18 minutes, tossing occasionally, until potatoes are golden brown and crispy.
- Meanwhile in a small saucepan, heat remaining 1 tablespoon of oil over medium heat. Add shallot, remaining ¼ teaspoon salt, smoked paprika and red pepper flakes. Cook, stirring frequently, 3-5 minutes or until shallot is softened.
- Stir in tomatoes and water. Cook 7-9 minutes or until liquid is reduced and sauce is fragrant. Add vinegar. Puree with an immersion blender until smooth and adjust seasoning to taste.
- Serve potatoes drizzled with tomato sauce and garlic mayonnaise.
- Refrigerate leftovers.
