Low-carb Jalapeno Sweet Potato Mash

This sweet and spicy side dish combines sweet potato and cauliflower for a holiday-worthy low-carb option.

Ingredients

  • 2 1⁄2 pounds sweet potatoes
  • 12 oz. cauliflower florets
  • 1⁄2 cup butter, melted
  • 1⁄4 cup heavy cream, heated
  • 1 1⁄2 tsp. salt
  • 1⁄4 cup pickled jalapenos, finely chopped

Directions

  • Heat oven to 400°F. Pierce potatoes several times with a fork and place on a baking sheet. Bake 45-80 minutes until fork-tender. Carefully peel the potatoes and place the flesh in a mixing bowl.
  • Meanwhile, place cauliflower florets in a microwave-safe bowl. Cover tightly with plastic wrap and poke 1-2 holes to vent. Microwave for 4-6 minutes or until cauliflower is tender. Transfer to the bowl with the sweet potatoes.
  • Add butter, cream and salt. Use a potato masher to combine. Stir in jalapenos, and adjust seasoning to taste. For a smoother mash, place steamed cauliflower in a food processor and blend until smooth before adding to the sweet potatoes.
  • Refrigerate leftovers.
