No-Bake Orange Creamsicle Bars

Ingredients

  • Crust:
  • 1 1⁄2 cups graham crackers, crushed
  • 2 tbsp. light brown sugar
  • 6 tbsp. butter, melted
  • Filling:
  • 1⁄2 cup orange juice
  • 1 envelope unflavored powdered gelatin, 1/4 oz.
  • 12 oz. original cream cheese
  • 1 can sweetened condensed milk, 14 oz.
  • 1⁄4 cup full-fat sour cream
  • 1 tsp. grated orange zest
  • 1 tsp. vanilla extract
  • 1 can mandarin oranges, drained and patted dry, 10 oz.

Directions

  • Combine crushed graham crackers, brown sugar and melted butter in a medium bowl. Press the crust into the bottom of a 9”x9” baking pan.
  • Pour the orange juice into a glass measuring cup. Stir in the gelatin. Let stand for several minutes, then stir to dissolve the gelatin. Set aside.
  • Place the cream cheese in a large bowl of a stand mixer. Beat the cream cheese until smooth. Add the sweetened condensed milk, sour cream, orange zest, and vanilla extract until smooth. Scrape down the sides of the mixing bowl, as necessary
  • Add the orange juice mixture and whisk to incorporate all the ingredients. Pour the mixture out on top of the crust.
  • Place in the freezer for six hours or overnight. Before cutting into squares, let the bars rest at room temperature for 10 minutes.. Garnish each square with a mandarin orange and a mint leaf, if desired.
  • Leftovers should be stored in an airtight container in the freezer for up to 2 days.
