Paleo Vietnamese Grilled Shrimp

  • 1 tsp. lime zest
  • 1 tbsp. lime juice
  • 1 tbsp. fresh mint, chopped
  • 1 tbsp. cilantro, chopped
  • 1 tbsp. coconut sugar
  • 2 tsp. lemongrass, finely minced
  • 1 tsp. fish sauce
  • 1 tsp. minced garlic
  • 1⁄2 tsp. salt
  • 16 oz. Simple Truth™ Peeled & Deveined Jumbo Raw Shrimp, thawed


  • Soak 4-8 bamboo skewers in water at least 20 minutes.
  • Whisk together lime zest and juice, mint, cilantro, coconut sugar, lemongrass, fish sauce, garlic and salt. Add shrimp; toss to coat.
  • Preheat grill to medium-high heat. Oil grill grates.
  • Divide shrimp between skewers for easier grilling. Grill 3-5 minutes, turning once, until shrimp are bright pink.
  • Refrigerate leftovers.
