Paleo Vietnamese Grilled Shrimp

Ingredients
- 1 tsp. lime zest
- 1 tbsp. lime juice
- 1 tbsp. fresh mint, chopped
- 1 tbsp. cilantro, chopped
- 1 tbsp. coconut sugar
- 2 tsp. lemongrass, finely minced
- 1 tsp. fish sauce
- 1 tsp. minced garlic
- 1⁄2 tsp. salt
- 16 oz. Simple Truth™ Peeled & Deveined Jumbo Raw Shrimp, thawed
Directions
- Soak 4-8 bamboo skewers in water at least 20 minutes.
- Whisk together lime zest and juice, mint, cilantro, coconut sugar, lemongrass, fish sauce, garlic and salt. Add shrimp; toss to coat.
- Preheat grill to medium-high heat. Oil grill grates.
- Divide shrimp between skewers for easier grilling. Grill 3-5 minutes, turning once, until shrimp are bright pink.
- Refrigerate leftovers.
